A simple Saison made from a base of pilsner malt and spelt. Citra Noble and Saaz hops were added in the kettle, along with a sprinkle of the orange zest we use for our Wit. The star of the show, however, is the yeast. Highly versatile and attenuative, this strain of French origin produces aromas and flavors of pear, citrus, and cracked pepper. Dry, effervescent, and extremely drinkable, this beer offers a refreshing respite from the hop onslaught of the last few weeks.

Clear golden brew with plenty of foam in the Troubadour tulip. Modest grainy aroma with straw and alfalfa. Sprightly and a little sharp on the tongue. Just slightly sweet to start and very sudsy mouthfeel. Modest flavors of cereal with a dry finish and some scratchy astringency, but in keeping with the style. Overall this is quite a pleasant quaff on the yeasty rather than hoppy side of the brewing world. From the 16 oz can purchased at Bridge & Tunnel in AStoria. Not dated.

16oz can. Bottom stamp reads 'YOU'VE GOT ME UNDER YOUR SPELT'.
Cloudy, straw colored body. Two fingers of dense white head, and this recedes back to a full cap and high ring. Leaves behind a lattice-work partial wall of lacing.
Aroma of fruity yeast with touches of grass and pencil eraser.
Taste is earthy and fruity, grassy and goaty, and with a bit of pepper. Yeast esters and phenols. Quick let off in the aftertaste.
Medium mouthfeel. Drying finish. Very good carbonation.
Easy to quaff, and rewards with lots of yeast expressions.
