This beer was blended from several of our long term mixed culture sours, into oak puncheons onto a blend of raw butternut squash and pumpkin at two pounds per gallons for three months. Next it was transferred onto roasted butternut squash, sea salt and palm sugar before bottle conditioning for three months. Not your average pumpkin ale. No "pumpkin spice" was used in this beer, only raw pumpkin and squash. While nuanced on it's own, it will pair incredibly well with all the rich and savory foods of the season.

Poured from a 500mL bottle into a Duvel snifter.
Pours a hazy orange-brown body with a generous three finger white head that reduces to a layer and leaves some lacing.
Aromas are tart, wine-like, oak and hay. On the tongue is a nice sourness, lactic acidity, followed by awesome butternut squash and pumpkin flavors. Tastes like real squash, not artificial. Really nice balance. Easy drinker, medium carbonation.
