After pulling Contrails w/ Peaches off of last years fruit, we were left with a beautiful slurry of peaches full of yeast and bacteria, both wild and from our foeder, which on its own tasted incredible, but promised more magic... So we pitched a base of Belgian pilsner malt, spelt, and raw Kansas wheat onto it and allowed it to ferment and age for 7 months. The results are an extremely complex beer, with rich, jammy peach notes throughout.

Purchased the bottle of this beer at the brewery in July.
Poured into a tulip glass. Bright clear yellow color with nice effervescent white head and good curtain lacing. Smell and taste of peaches and slightly sour white grapes. Tart, earthy and refreshing. Compares to Jester King.
