Collaboration with White Elm Brewing Company
Brewed with our buddies at White Elm Brewing Company, this Pineapple Tepache Sour is based on the Mexican street vendor drink. We brewed a sour base and added a ridiculous amount of pineapple, then Ceylon cinnamon, Jaggery, lactose, sea salt, and then fermented it using Kveik yeast for a flavor so absurdly refreshing you may feel like you're in a pineapple.

16 oz can from Tavour. Hazy straw colored pour, flat. Tart aroma, citric, pineapples. Light citrus taste, mild tartness, refreshing. Light juicy notes.

L: Opaque, but letting much light through, a fair honey hue with a white fizzy head that fades down to a thin cap and ring.
S: Nicely sour, with notes of raw sugar and pineapples.
T: Lemon and pineapple sour with a slight honey sweetness and a gose-like salt.
F: Thinner but well-coating. This has a bitter and drier finish which is welcome.
O: I can't hear you. It's hard to focus on anything else when sipping down this lovely brew.

Drekker/White Elm I Can't Hear You Pineapple Tepache Sour, 5.3% ABV. Pours cloudy orange with a half-finger white head. Nose is pineapple. Taste is pineapple and citrus, slightly tart and equally sweet. Excellent smooth mouthfeel, overall outstanding.

L: Had this beer on-tap at Growlers to Go - Short Pump, poured into a pint glass. Had a yellow / green color and a very cloudy consistency. There was a quarter inch of foamy head that quickly dissipated. Not much lacing to speak of.
S: A light and fruity aroma of citrus fruit, tropical fruit, spices, malt, yeast, and sea salt.
T: Tasted of a good amount of spices (specifically cinnamon), lots of tropical fruit (pineapple, especially), some light malt (not a big factor), a ton of citrus fruit (lemon, lime), and a little yeast (just a tinge). This is a sweet and effervescent flavor. The fruit and cinnamon mix well together. Delicious.
F: An average amount of carbonation with a sharp finish. Light-bodied.
O: A well done, tasty beer. Drinkable.
