this tastes alright, but i definitely wanted more from it. i mean, it tastes new and sort of amateur, like they are still figuring it out, but it has a ton of promise, and is drinkable enough as it is, but its close to being a lot more special. its an apricot saison with a light tartness to it and just a little funk as well, its immature and young on the yeast side, but the saison yeast aspect is pleasant and well refined. the apricot is natural and subtle, more of an accent than a lead flavor, which i appreciate. i think the goal is to have a lot more wood aged and wild beers happening here than they currently have working, i know they are still really new and they have to have something on tap, so i can respect this, but with some barrel treatment and a brett refermentation, this will be an awesome beer. good body, dry for it having fruit in it, and nicely carbonated to be refreshing. the yeast profile is unique, its just not where it is going yet. a fine start, but nothing special in its current form, although we enjoyed it well enough. i want to check back in on this when they have had a little more time to get this type of thing dialed all the way in...
