Poured a dull gold color, huge bubbly white head that faded fast, leaving some small wispy threads of bubbles. Just a small amount of cloudiness, but noticeable.
The aroma is tart green apple initially. As the beer warms, it becomes more like a white wine smell. A tiny bit of funk, lemon, mildly spicy, earthy, crackery malts.
The taste follows along with a nicely restrained blend of sour apple, white wine notes, mild peppery spice, crackery malt, and a little sweetness. It actually gets quite wine-like as it warms a bit. There is a little earthy note on the finish that us pleasant.
It is a little spritzy with small bubbles...plenty of them. Crisp and clean on the finish, with some carryover of the spice/peppery notes.
Not your average saison. Quite a bit cleaner with well-defined flavors. I have had this bottle for a while, and it seems to have aged gracefully. Nice beer, recommended.

Huge, four-finger head. It even foamed out of the bottle. But it has no lasting power and it leaves no lace on the glass. The liquid is dirty gold and very cloudy.
Proper farmhouse ale aromas. Lightly sour but with an overall crisp stale pale malt smell.
Lightly tart with a pale malt base. Thin bodied with an appropriately high carbonation level. The aftertaste is short lived and sour.

It pours a cloudy light amber color with a quick to reduce off white topper that settles into a thin ring and small bubble islands that hang on for the ride.
Nice rounded tart and crackery grain aroma with lighter notes of lemon-limey and even lighter notes of spice and earth.
The taste is a wonderful rendition of the aroma, with the spice revealed as a light pepper flavor, and the malt distinguishing itself as a delicious mixture of raw wheat and an unknown graininess I assume is the spelt. Well balanced, clean, and bright taste that is quite delicious.
Spritzy carb. and medium viscosity that ends in a clean as a whistle finish of tasty tart and hints of earth/spice that leave it just juicy enough. Refreshing, interesting.
Highly recommended for its subtle differences from other saisons, its clean flavors, and its refreshing nature.

A: The beer is hazy yellow in color and has a moderate to hight amount of visible carbonation. It poured with just a thin collar around the edge of the glass, which eventually completely faded away.
S: Light to moderate aromas of lemons and Lactobacillus are present in the nose.
T: Similar to the smell, the taste has some flavors of Lactobacillus and associated lemons along with some hints of grain, which I presume must be the spelt.
M: It feels light- to medium-bodied on the palate and has a low amount of carbonation.
O: This beer is interesting but is definitely a different take on the saison style.
