Dekkera is a 4%ABV table beer fermented with our house brett strain. Dry fruits and brett character in a very easy drinking beer.

Bottle, batch 3 (August 2018) from the Bottle Stop in Torrington.

A clear light yellow with a large white head with good retention and lacing this looks great. The nose is simple yet refined and delicious. Green apple, melon, mild lemon, straw and a light mineral note are present. There is also a little spice, a faintly peppery and clove like note present. The palate opens crisp and snappy with a blend of snappy straw and firming clove phenols. Brett lends layers to the palate here, with light fruits ( melon, peach) , spice, a little earth, and finally, a mild bitterness. Mild floral notes with chamomile present. Drying on the finish with crisp carbonation, flavors of Brett linger on in the finish. Excellent.

Quite hazy bright golden color with white head. Aroma is quite floral, citrusy and funky. Taste has a light sweetness at first with fruity brett notes and a nice grassy bitterness on the finish. Light body, quite effervescent. Really nice brett beer.

This brett saison is truly heavenly, and I've come back for more on successive nights; it's been impressive every damn time. Oh, it's floral, fruity and musky, but what's incredible is how it's put together. All of the flavors are so harmonious, seemingly just shades away from one another (a brief list includes straw, passion fruit, star fruit, cotton candy, anise, crackers, fennel, chamomile, meyer lemon...) And the mouthfeel is fluffy, yet dry, and surprisingly full for the gravity. They may be coloring with pastels here, but it's a masterpiece of elegance and precision.

Bottle poured into a snifter glass. The beer is slightly hazy, with a golden-lime-bronze color with a large white head that steadily fades. This offering has a strong nose. The feel has strong brettanomyces and has light biscuit/cracker malt. No alcohol really present here. The flavor has hints of lime, passion fruit, honey, maybe guava... The balance on this one is fantastic. Overall, this may be one of my favorite Kent Falls offerings (farmhouse ale/saison offerings). Definitely worth seeking out, cheers!

Basically a perfect brett-beer. Avoids all of the problems that the style can have-- great mouthfeel, no off-flavors, perfectly carbonated. One of the best I've had from KFBC.
