Toasted Hay Grisette. Brewed in collaboration with our friend Marcell Davidsen, then of Community Table. Toasted Hay is an ingredient he used frequently in the kitchen. A translation into beer yielded wonderful results. Delicate notes of cinnamon, vanilla and nutmeg.

Pours cloudy hazy opaque golden yellow with a creamy frothy white foam head. Smells like banana, vanilla, sweet spices, some lemony orange citrus, musty toasted hay, with some minty herbal earthy grass and pine. Tastes like tart lemony orange citrus, some cinnamon-esque peppercorn spice, vanilla, mild banana, musty toasted hay, with minty herbal earthy grass and pine. Feels light bodied, creamy and smooth with moderate low carbonation. Overall a really nice toasted hay grisette.

Had on tap at Prime 16 in New Haven on Friday night, poured into a nonic pint glass. Comes out a very hazy golden straw color, smallish one finger head leaves splotchy lacing.
Smell is pretty typical saison, nice tartness, bit of yeast spice, malty backbone. Flavor starts with a touch of tartness, kind of like that wheat twang you get, some sweetness in the middle but not much, spicy finish yet still very smooth. Touch of grass.
Well made saison, I liked this a lot, thought the flavor was pretty unique and would have never guessed it was made with hay.
