Named after our beautiful neighborhood, The Hollow is our house pilsner brewed with our northeastern farmhouse sensibility. Growing hops requires a lot of work outside in the heat. And there’s no better beer to have after a day in the hop yard than a clean, beautiful pilsner. This beer is hopped with Brewer’s Gold; one of the five varieties grown on farm both for the delicate character it contributes in a clean snappy lager such as this as well as the success we have had growing the variety in our own hop yard.

A: very slight haze; medium gold in color; 1 finger white head that receded to a wispy cap; nice lacing;

S: grass and leaves;

T: grass, leaves, lemon, and floral; mostly lemon and floral by the end; mild to moderate bitterness on the finish;

M: light to medium bodied; moderate carbonation; dry finish; crisp;

O: nice complexity in the flavor; refreshing; made me come back for another sip;

This is the only beer I drank for the last 48 hours, at least four of them during my 50th Reunion at high school. Each time, The Hollow served its purposes: after tennis, as an aperitif in August and at dinner; and it served particularly well in the first two purposes. Hence my high OA rating (which also was influenced by the occasion of getting this old and seeing old friends and seeing our school enter a new era.) My only previous brew from Kent Falls had a wild yeast that I also rated above the average. A rustic impression for The Hollow comes thru Overall, which is a good interpretation in my book.

The Hollow Looks average; decent foam, but not as clear as the classics. Smells are mostly malt with grassy hops in the back nose. Tastes have sufficient hops for refreshment, but stay in balance. This is medium-mouthed and close to chewy. It was less suitable with food, but still good and respectful of what was being eaten (pizza the first night and a buffet the second) I am glad that the small town I spent 4 years of my life has contributed to western Connecticut's culture.

Pours a golden transparent. Light doughy nose. It smells like a dough that's in the works but is currently in the autolyse part of the process. It's very malty, doughy forward with a slight floral hop note. It's almost got the character of a saison that hasn't produced any esters what so ever. Carb is also kind of disappointing, so it lacks some zip. A lot of my friends are fond of Kent Falls so this is highly disappointing.

A: The beer is rather hazy dark yellow in color--a bit too hazy to see if there is any visible carbonation. It poured with a short white head that left lots of swirls of bubbles covering the surface and a narrow collar around the edge of the glass.
S: Light to moderate aromas of biscuit and grainy malts are present in the nose along with notes of grassy and fruity hops.
T: The taste has flavors of grainy malts with notes of biscuit malts and hints of grassy hops and black currants. There is a light to moderate amount of bitterness.
M: It feels a bit shy of being medium-bodied and clean on the palate with a moderate amount of carbonation. The mouthfeel is a bit "chewy".
O: This pilsener smells and tastes a little more "rustic" compared to other beers in the style, which I found to be an interesting change of pace.

On tap, poured from a growler into a pilsner glass. Pours a lightly hazy, light to medium golden amber with a half finger white head that dissipates to patches with light lacing. Aroma of grainy biscuit and bready malt, mild grassy, lightly floral hops and a hint of citrus. Flavor follows with biscuit malt with husky grain notes, grassy hops, light lemon citrus. Finishes with pleasant bready and crackery biscuit and dry grass. Medium bodied with light to moderate creaminess. An authentic domestic take on a German style pilsner with a good pilsner malt base and noble hops. The hops are bit light, but the malt has a robust pilsner flavor throughout into the finish. Pleasant.

On tap at Armsby Abbey in Worcester, MA.

This one pours a slightly hazy light orange color, with a small head, and a little bit of lacing.

This smells like slightly sweet malt, grassy hops, minerally yeast, and light hay like aromas.

This is solid, with an interesting doughy and subtly sweet malt backbone. It’s mildly hoppy, with grass and fresh hay, with a touch of mineral and herbal flavors on the back end.

This is crisp, but slightly woolly on the finish - it finishes a touch messy. Nonetheless it’s very drinkable and easy to take down.

This is my first beer in over a month, so maybe I’m rating higher than it deserves. This isn’t perfect but it’s an intriguing rustic pilsner.

Got in a trade with brutalfarce. 16 ounce can into lager glass, canned on 12/10/2018. Pours fairly hazy/cloudy pale golden yellow color with a 1 finger fairly dense and rocky off white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big lemon, lime, orange, wood, mint, citrus peel/zest, peppercorn, cracker, white bread, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/earthy hops and moderate pale malt notes; with great strength. Taste of big lemon, lime, orange, wood, mint, citrus peel/zest, peppercorn, cracker, white bread, and herbal/floral/grassy earthiness. Light-moderate citrus peel/zest, herbal, floral, woody, grassy, peppery bitterness on the finish. Lingering notes of lemon, lime, orange, wood, mint, citrus peel/zest, peppercorn, cracker, white bread, and herbal/floral/grassy earthiness on the finish for a good bit. Great complexity, robustness, and balance of citrus/earthy hops and moderate pale malt flavors; with a great malt/bitterness balance, and no lingering hop astringency after the finish. Fairly crisp/clean finishing. Perfectly clean on lager flavors, with no fruity/yeasty notes present. Light-moderate increasing dryness from lingering bitterness and carbonation. Medium-plus carbonation and light-medium body; with a very smooth and moderately bready/grainy/sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 5%. Overall this is an excellent German pilsner. All around great complexity, robustness, and balance of citrus/earthy hops and moderate pale malt flavors; very smooth, crisp, clean, and refreshing to drink with the mellowly bitter/drying finish. Very flavorful and not watery for the ABV. Great clean pils malt showcase, with balanced citrus/earthy hops. A very enjoyable offering. Hop profile was pretty unique, but still spot on stuff for the style.
