Made with 100% German Saaz hops, this one reminds us of bouncy castles in grassy fields on sunny days. The first in our series of can conditioned beers, Unmitigated is just as playful as it is strategic. Can conditioning refers to the process of packaging beer flat (no bubbles), and buidling natural carbonation within the can while it chills out for a few weeks. We put our own spin on this classic style by utilizing Krausen from actively fermenting Helles to create those delicious bubbles and promote fermentation within the cans. Slightly hazy, golden color. Big, white head. The aroma of grain, hay, and a hint of yeasts. Malty but not sweet at all.Pleasant balancing, hoppy bitterness.A really good lager.

On draught at the brewery.
L: Hazy, dark gold with a thin head that leaves a decent ring.
S: Lemon pith and very mild cyder vinegar.
T: The dominant flavour is red berries. Lemon, grass and a subtle spiciness follow. Low bitterness.
F: Light body with moderate carbonation. Gently dry finish and just a tad of oiliness.
O: Delicate and restrained. Enjoyed.

The nose is primarily cereal. Some grassy hops sit in behind. Some I’ll-defined spiciness. Delicate aroma.
Taste follows but with a little more diversity. Light grainy character on the tongue. Grassy notes punch through next. Some floral qualities as well. Good.
Lighter body. Easy drinking. Enjoyable.
This was a very nice Kellerbier. Threes has never let me down in my limited experience of their beers.

Cloudy yellow body, full white head, tons of lacing. Leafy and grassy hops atop big pale lemon and malts in the nose. Taste takes what is detected in nose and adds the needed yeast flavorings: bread innards, white pepper and biscuit. Fuller bodied for style, hops are the right level though, definitely new world but a noble take

Poured into a Seattle Beer Week pint glass. Pours a lightly hazy, light to medium amber with a massive five finger white head that slowly dissipates to a fine, thick cap with thick lacing. Aroma of bready, lightly grainy malt, citrus and lightly grassy hops, lemon and apple. Flavor is grainy biscuit malt, grassy and lightly citrus hops, floral hay, grapefruit and lemon; lightly spicy and with a lingering grassy and citrus rind bitterness in the finish. Medium bodied with light to moderate creaminess. This was a totally pleasant surprise. Just by coincidence this kellerbier arrived a week before a bunch of German imports including kellerbiers and märzens. It seemed unfair to review this domestic take against the continental brews, but of course the latter have the disadvantage of much longer travel and storage time. And it really shows. Both the malt and hops here are bright and fresh. I was surprised by the citrus flavors in this beer, especially when I read it is brewed exclusively with Saaz hops. It has the grassy notes of that hop but much more complexity and a delightful citrus rind component. I'm lukewarm on noble hops, but this was delightful. This was a very nicely brewed kellerbier and tasted authentic to me. Well done.

The nose comprises sweet biscuit, mild greens, a vague sense of citrus, and something that my nose and brain are trying to tell me is black pepper, but I can't fully discern the identity. Things proceed mostly apace on the tongue, with more greens and a light biscuit character that comes to approach cracker near the finish. The body is a light medium, with a light moderate carbonation and a fluid feel. Nice zwick, to be sure.

Canned 2/20/21? That can't be right.
Popped the tab and beer just erupted out of the can like a frothy, alcoholic geyser. Holy shit. Keep your paper towels handy. I guess that's what can conditioning gets you? Or maybe just a fluke; I dunno. Finally get some poured and, as expected, it's just a huge, dense off-white head. Gets fluffy as the bubbles expand and cling to the sides of the glass, eventually leaving just a solid wall of lace. Body is kind of a cloudy gold. Smells great; the hops are still in abundance if this is indeed a year old sample. Herbal, spicy and grassy with a doughy malt backbone. Tastes largely as it smells, just a little subdued and sweeter with a mild lemon note on the back end. Yeasty, too, though I don't really know how to pontificate on that. It's just, you know, yeasty. It's nice and, again, isn't showing it's age. 'Pert near medium-bodied, medium-low bitterness and pretty much perfect carbonation. So there's a point in favor of can-conditioning, I guess. There is, however, the slightest skunky tinge in aftertaste land. It doesn't ruin things in the slightest, though. You almost have to search for it. Hell, this ended up being a very good beer after the rough start.

A: The beer is hazy amber yellow in color and has a moderate about of visible carbonation. It poured with a finger high off white head that left a quarter finger high head covering the surface and lots of lacing down the sides of the glass.
S: Light to moderate aromas of yeast are present in the nose along with hints of bready malts and grassy hops.
T: The beer has flavors of yeast along with hints of bready malts and grassy hops.
M: It feels light- to medium-bodied, chewy, and somewhat dry on the palate with a moderate amount of carbonation.
O: I thought that this beer had a nice dryness in the mouthfeel, which paired well with the yeasty flavors.

Can-conditioned kellerbier. Pours dark golden, unfiltered, with half a finger of head and good retained lacing. Graham, yeast rolls, and straw on the nose. Apple, grass, and pepper accents on the palate. Little hop bitterness.

Can from the brewery in Brooklyn. Pours a mildly cloudy golden orange with two fingers of rocky white head that sticks around, nice lacing, smell is doughy sour wheat bread, hint of funky grass, taste follows with sour wheat bread, decent funky grassy bitterness that lingers, hints of honey and citrus, feel is light, soft carbonation. A crushable doughy, funky, hoppy treat.
