With spring in full swing, the fare at the dinner table is lightening, and so are the taste of beers. With notions of floral, flowery, bloomy dreams in mind, the brewers at Ethereal release a beer that's cut from those same clothes.
Mumble awakens the senses with a militant carbonated march that cuts through a hazy golden austere. Hazy and well-capped, the beer's heady cotton froth unleashes an array of aromas- citrus, orchard fruit and soft spiciness wafts over the session as its early taste is equally soft with sugar cookie, sourdough and pilsner-esque grain and honey.
The middle palate rises up with juicy fruitiness of lemon and orange, but then with pear and apricot, and finally light pawpaw and pineapple. Though firm, the spicy rebuttal to fruitiness finally wins out with a strong vanilla, clove and white pepper balance. Bittered with straw, grass and citrus peels, the hop impressions are peppery and acute.
Evaporative cooling hits the tongue with refreshment and delight. Just of off utmost crispness and cleanliness, the medium-bodied beer applies a creamy coat onto the palate rather than with the zing of champagne. Bready-sweet and spicy flavors trail behind with those hop bitternesses leaving final impressions.
