Light golden body with durable white head.
Moderately funky (Brett) and tart with mild bitterness. Hints of lemon, grapefruit and wheat.
Medium light body with medium light carbonation.

Taking the saison to the sour side, the challenging microflora trades the normal dried fruit and spice character of typical farmhouse ale for sour, pepper, wine and wood. Ethereal's new saison is truly an anomaly.
Dull, yeasty and with a burnt orange appearance, the frothy ale rolls onto the nose with a peppery, vinous, fruity and piquant acidity of extended oak aged white wine. Mild sweetness is grainy, honey-like and remiss of stale bread.
As the sweetness dissolves easily on the middle palate a fruit filled taste seem of dried varieties of lemon, pear, apple, grape and green berries. A spicy balance is strong with peppercorn, cumin, oak spices, a vinous bite and a brisk earthiness of brine and bog. Also spicy are the hops that carrie a grapefruit and lime peel flavor onto the late palate, equipped with hay, pine and verbena.
Medium bodied for saison, the sourness gives the texture a brisk and lightened character while the retro-olfactory senses return with cellar-like pungency and aged attic woods. A medium length after current is crisp and refreshing with a grassy hop bitterness and a linger of a ry-like grit.
