This farmhouse-inspired wild ale was brewed with malted wheat, NY grown triticale, and inoculated with native microflora. Opal Basil was steeped during the coolship rest to provide an herbal balance to the tart flavors derived by our house wild yeast culture

On tap at Common Roots. I don't claim to be hip to all the lingo slung by my fellow hop heads, but this is one tasty brew. Light , refreshing, and just the right amount of pucker. I am a newbie when it comes to sours, but damn.

From a 32 oz growler :
Clear coppery-gold , with quickly-dissipating off-white head. Leaves a persistent ring of foam.
Smells of apple cider vinegar and a light, sharp funk, that has elements of wet dog and new car. Some faint spice, which I assume is from the basil.
Flavor is sour apple, faint black pepper, a touch of the dark opal basil - the most pungent part of that flavor, not sweet - , and a little cheesy(?)+kimchee funk. Lingering, drying sourness.
Feel is light, & slightly oily, with light, very fine carbonation.
Overall, very enjoyable and refreshing at the end of a hot summer day. I highly recommend it.
