Congratulations. You made it Almost.
Exceptional taste is the only thing that will get you through the gate at this point. When defiance is threatening to bubble over, it takes tremendous restraint to keep what matters most in-check. Keep your cool, you got this.
Our flavourful Saison is discreetly sessionable. It boasts a crisp body with a dry finish and a bouquet that is distinctly Belgian. Hints of clove and spice, complemented by aromatic hops, make us stand out where it matters most.
Welcome to the lab.

Pours a bit cloudy, apricot colour. Really nice head. Fruity aroma. Very tasty, not a daring or new flavour though. Not sure this is retired, bought at Toby's on Commercial Drive in East Van March 18th.

650ml bottle, part of the next wave of BC craft brews to arrive on Alberta bottleshop shelves after the recent local region-favouring tax change, methinks. I'm not exactly clear on what part of this product is supposed to be 'unsanctioned'.
This beer pours a clear, pale golden amber colour, with four fingers of puffy, finely foamy, and bubbly off-white head, which leaves some decent peninsular and archipelago lace around the glass as it gently subsides.
It smells of grainy, doughy pale malt, a touch of astringent wheatiness, some testy Belgian yeast, white pepper and clove spice, muddled light orchard fruit, and some tame earthy and weedy old-school hoppiness. The taste is gritty, grainy pale and wheaty malt, clove, white ginger, and black pepper spice, middling earthy and gently acerbic yeast, and a still weak leafy, weedy, and floral noble hop bitterness.
The carbonation is nice and fizzy and frothy, the body a so-so medium weight, and more or less smooth, maybe a touch of that sassy-ass yeast trying to make an ill-advised name for itself here. It finishes off-dry, but barely, as the biscuity, crackery character of the malt tries to make its way amongst the lingering yeast, spice, and hoppy countermeasures.
Overall, not a bad dry saison, the mild tartness and resplendent spice essences doing well to assert their provenance over the whole of this offering. Given my predilections for the style, not something that I'd care to repeat my acquaintances with, but that's hardly a negative comment on the inherent brewing skill on display here - take that as you will.

Appearance - Pours a medium amber tone with a finger width of bubbly white head.
Smell - Belgian yeast, clove, fruity esters, spicy hops, biscuity malts, pepper.
Taste - Biscuity malts followed by subtle flavours of spicy hops and the yeast. More malt dominated than the aroma suggests.
Mouthfeel - Medium bodied with moderate carbonation. Finishes dry with lingering yeast characteristics.
Overall - A saison with an aroma that leaves me wanting more in the taste. Smell was fairly spot on for the style, however the taste was too malt based and the yeast really snuck in at the end. A few adjustments and this could be a knockout.

Category 12 Brewing 'Unsanctioned Saison' @ 6.9% , served from a 650 ml bottle purchased for $5.65
A-pour is a light gold from the bottle to a clear gold in the glass with a big frothey white head leaving a streaky lace along the pint
S-mild smelling saison
T-mild & mellow tasting saison , (shouldn't a saison be spicey)
MF-ok/decent carbonation , feels full bodied
Ov-ok beer , no wow factor
