This Lambic inspired ale was fermented and aged in French and American Oak barrels deep in the belly of the Bozeman Underground. Over a period of 47 months a blend of bacteria and wild yeast created a complex flavor profile that is tart, funky, and fruity. During the final months of aging, plum was added to individual barrels and allowed to referment.

Cellared 2 years. Murky bright orangey yellow pour with a off-white cap. Super oaky and bretty plum nose. Very sweet for style with barely any sour plum, but has plenty of brett, balsamic vinegar, and oak, earthy tones whisper underneath it all. Lighter bodied but smooth and wet, tartness is subdued and funk is short lived. Some technical balancing issues hold this one back

Partially cloudy, apricot orange colored body; very lively carbonation; thin head only partially covering the beer, more so as the beer warms. Sour smell with a bit of horse blanket; fruity. Very sour taste upfront; earthy woodiness around the edges; more cherry like than plum; tart lime; toasted wheat shows up as the beer warms. Medium-heavy body; lively coarseness on the palate; sweet overall but with some dryness in the middle of the taste.

This is one wild wild ale! The bottle description states it is lambic inspired, and the beer's characteristics certainly reflect a fruit lambic profile. This is a fine beer.
