a really intelligent kettle sour here, done with passion fruit and a bunch of chili peppers, ancho, de arbol, guajillo, pasilla, and habanero, way cool! or way hot rather, although i guess its not all that hot considering the mix of peppers, its got some throat heat, but its not insane and it doesnt linger too long. lots to digest here, like its pretty sour for one, clean lactic souring but to a pretty high degree, so the acidity makes it kind of a small doses thing already. its blonde and almost still looking, shiny but not quite clear, looks a little bit underwhelming with so little carbonation activity or head. i get some smoke from the dried peppers, some more citrusy fleshy freshness too, hints of raisin and white wine together is kind of weird, but the pepper part is strong and appealing, not sure it needs to be this sour. the passion fruit is also natural and robust in this, sweet for a flash in the taste, more sour in the nose and on the back end, tart rather, and it plays well with the lactic souring. the fruit and the chilis together are cool, summery and latin. the heat starts late and is mostly confined to the back of the throat, tons of cool layers to the pepper profile. more bubbles would be a good add, but overall i liked this a lot, strange and good at the same time, really ambitious. love all the different peppers together in it!
