I picked up a growler of this on a whim for a Super Bowl party last weekend. I've seen this as a recurring beer at Noon Whistle but had never tried before, and figured why not?
This beer pours a clear, straw hue that features moderate carbonation and is graced with a bright, white foamy head that dissipates slowly to a ghostly lacing with a neck. 3.75/5 The aroma is fairly well balanced with a nice malty layer of white bread, caramel, and cracker that works alongside a floral hoppiness as well as the herbal and floral qualities of lilacs. There is a heavy emphasis on the floral nature of the lilacs and hops. 3.75/5 The floral and herbal nature of this beer dominate throughout the flavor profile with a bitterness that is moderate and lingers only lightly after swallowing. Light caramel and white bread start things off for the malt but then the flavor quickly transitions to the hops and lilacs, with a bit of white grapes and pears bringing out a very light fruitiness as the beer warms. 3.75/5 This is a light bodied beer with moderate carbonation and a moderate dryness that lingers only lightly after swallowing. The finish is fairly short but the beer does dry the mouth a good amount. 3.5/5 This is a very interesting beer mainly due to the lilacs and their floral and herbal qualities. Whereas the floral is emphasized, their remains a sizable herbal undertone that runs concurrent with the floral throughout the length of the flavor profile. The malt is not near as strong in the flavor as it is in the aroma, but this is ok since the bitterness from the hops and lilacs is not crazy high. 3.75/5

On tap at the brewery. Pretty new brewery in the Chicago area & the first time I've had anything from Noon Whistle
A - very cloudy peach colored body with a creamy off-white head that holds good retention
S - fresh zesty nose with citrus, yeast and faint banana nut in the background
T- zesty again here with grapefruit, lemon, and orange rind at the forefront; yeast, wheat, grass
M - medium body, smooth, finishes zesty and semi-dry
O - nice saison. I look forward to having more from Noon Whistle.
