Bold and velvety with a subtle sweetness, this big barleywine holds complex notes of caramel, toffee and raisin. This barleywine was then added to bourbon barrels and aged to perfection.

Pours a hazed dark copper color with a tan ring of foam. Smell of dark fruit ,caramel malts, and barrel. Taste has dates and fig, caramel toffee and carmelized sugar whiskey and wood in finish. Mouth feel is full bodied on the boozy side slight harshness from the barrel mellowed as it warmed with more fruit .

Had this at the new Noon Whistle location in Naperville. This was you typical Barleywine with touches of caramel, dark fruit and toffee. A touch of sweetness at the end was nice. It was very smooth and drinkable for an 11% ABV.

375ml bottle with black cap. Poured into Crooked Stave Snifter.
Appearance: murky dark brown bodied beer with bone white head. Head pours a thin cap and drops down to a ring around the glass quickly.
Smell: Dark fruits and brown sugar bomb. A hint of oak and booze.
Taste: Boozy caramel, brown sugar, and toffee. Astringent bourbon. Lingering bitter finish.
Mouthfeel: full bodied beer. Low and adequate carbonation levels. This one is a little boozy and "rough around the edges" Nothing very smooth about this beer. Perhaps what I am trying to say is this would be alot better if it was sweet, rich, and smooth.
Overall: This one is a little rough out of the gates, but might become something very nice in 3 to 5 years. Right now its a young and out of balance with itself. It does have good potential if the aging process kills of the bitter finish and the booziness mellows over time.

Pours a cloudy medium amber, with no head and sparse, spotty cling. Aromas of cherries, caramel, dates, brown sugar, malt, some oak and smoke, light bourbon, light tobacco. The bourbon steps up in the flavor, then caramel, malt, some dates, some oak, light brown sugar. Has kind of a general fruity flavor. Smooth, good medium to full body, well carbonated.
The barrels are very good. The base is good, but not a strong one. Still, it’s certainly enjoyable. Have a few more to age.
