In early April 2021, we filled a single pear brandy cask from our good friends Apple Country Spirits with about 50 gal of wort, hoping to further understand the relationship between oak and fermentation.
We subsequently pitched our favorite saison yeast and two of our favorite strains of brett into the cask and allowed the liquid to ferment and rest there for the first 8 months of it's existence. After the beer had started to mature, we moved it to a stainless steel cask to allow it to finish without picking up too much oak character.
As the harvest season of 2021 drew to an end, we were lucky enough to get fresh pressed pear pomace that we refermented this beer upon.
Bottle and Keg Conditioned for nearly a year, we hope you enjoy!

This one pours a slightly hazy golden orange color, with a very small head, and basically no lacing.
This smells fantastic – lemon candy, candied pears, honey, white wine, oak, and stone fruit.
There’s pear all over this, with a honey and candied pear thing coming from the pear brandy barrels. There’s some lemon and stone fruit sort of stuff, that might be from the actual pear itself. There’s some wine-like flavors, some citrusy funk, and oak. It’s all well balanced.
This is very drinkable, with a very soft and low level carbonation.
This is probably the best mixed fermentation beer that Swiftwater has done – it’s quite, quite good.
