Bokonon is crafted with mainly Belgian pilsner malt and raw wheat. Oats are added to provide a little body, and give something for the wild yeast to interact with. It is lightly hopped to 25 IBU's with noble varieties. With a French saison yeast strain, and a warm fermentation, the beer ferments completely dry. It is then aged with the wild yeast, Brettanomyces Bruxellensis, and after a small dry hop, it is packaged. The wild yeast will restart another fermentation in the bottle, providing carbonation, that will increase over time. During this process the wild yeast will continue to develop barnyard characteristics in the bottle, and Bokonon will become increasingly bubbly and funky.

Appearance: Pours a slightly hazy golden color with a one finger head that fades to a film leaving a few strands behind
Smell: Leathery funk, crusty bread, pear, melon and a touch of grapefruit pith
Taste: Leathery funk with growing barnyard tones; underneath, crusty bread, pear and melon emerge; through the middle, a bit of grapefruit pith adds a bitter edge to the finish
Mouthfeel: Medium body with low to moderate carbonation
Overall: Unusually funky but that is the buildup from many years in the bottle

Pours a murky whitish-orange with a foamy beige head that settles to a partial film on top of the beer. Thick swaths of lace form around the glass on the drink down. Smell is of grain, tropical fruit, citrus juice, earth, funk, and Brett aromas. Taste is much the same with tropical fruit, citrus juice, funk, Brett, and slight chlorine flavors on the finish. There is a mild amount of earth and funk bitterness on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a pretty good beer with awesome funky aromas, but there is a chlorine like flavor that detracts from the flavors a bit to me.

A: Pours a glowing, hazy golden color with a huge, fluffy white head. Some nice lace on each sip.
S: I mean, it's hard to get around the overlying (and maybe even a touch overbearing) brett in here. Musty, a little rubber cement-y, and hovering, but also giving up some aromas of ripe stonefruit, citrus and light lemon. For my personal preference, the brett is a touch much, but there are definitely some pleasant elements to it.
T: Again, right away, you get that leather/burnt plastic brett flavor, but it slowly gives way to some wheat and light grain and hints of citrus and maybe just a touch of peach. It finishes rather dry and leaves a lingering, leathery brett flavor in the corners of your mouth. A cool experiment, but this might be a bit above my brett tolerance level.
