Dear You is not a typical saison. The french yeast provides a drier and earthier flavor than sweeter and fruitier Belgian styles. Acidulated malt gives the beer a tartness while the white wheat provides a hazy and pale appearance. At our microbrewery Denver, we use American Citra hops for both brewing and dry hopping to provide an aroma similar to a pale or india pale ale.

I enjoyed this beer quite a bit. It's basically a saison, full of flavor but not too peppery or farmhouse-y (is that a new beer term?), and nicely balanced. I haven't had a ton of Ratio's beers but if this one is any indication, I should try more of them in the future.

I actually really liked this, a great first impression. The hop flavor is subtle but actually blends seamlessly with the saison spices. Honestly this was excellent

On-tap at Terminal Bar, Denver, CO
A: The beer is hazy light yellow in color and has a moderate amount of visible carbonation. It poured with a finger high white head that consistently left a short head covering the surface.
S: Light to moderate aromas of lemony hops are present in the nose along with hints of Belgian yeast.
T: The taste follows the smell and has flavors of lemons along with hints of Belgian yeast.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: With the aromas and flavors of lemony hops, this beer is very refreshing and fruitier compared to other saisons.

Its name includes "saison", but the bar's description said French yeast. So, Biere d'garde is an appropriate style.
While cloudy for the style, I assume that comes from the portion of wheat.
It Smells and Tastes citrusy, but I'm guessing it is more from the yeast than the hops. And I like saisons that do not get bitter. And this is that. In fact, it finishes creamy. A delightful ale. My only wish was that I had it with food.

T: Notes of peach and apricot, lots of spice and yeast character and very doughy, lots of neat stuff going on. Finishes quite dry.

O: A very interesting take on the saison nice and spicy.
