Originally the second beer in our one-time-only appreciation-fueled "Saint Series," and after months of longing to drink it again, we gave in and promoted Saint Thomas to rotational status in our series of hazy IPAs. This single hop American IPA showcases Mosaic hops alongside our clean and grainy pilsner malt and copious amounts of wheat and oats. Living up to its name, Saint Thomas opens up with an aromatic barrage of freshly made tropical fruit salad, dousing the sinuses in a cavalcade of over-ripe melons and fresh-squeezed fruit juice. Honeydew Melon, ripe citrus, fresh green grapes, and hints of pineapple juice dominate the palate. The grain bill provides a blank canvas, letting the hop character dance all over the palate, finishing with a clean and refreshing note of freshly cut ruby red grapefruit. We try our best not to admit that we have a favorite, but it is impossible to deny how much we adore this tropical fruit punch of a beer.

On tap at Roscoe's today. Normally I like pretty much everything Fieldwork makes. Not this week.

The beer actually looks great, pouring a solid gold color with really good head retention and considerable sticky lacing all around. On the nose.... I guess I would describe it as muddled. There's some onion, light perfume and cereal grain. It's kind of an odd combination. However, this beer is much worse on the palate, as there's something of a shampoo soap meets onion flavor component. The soap component was particularly striking initially, but subsided somewhat as it sat in the glass. Supposedly this is made with mosaic hops, but I'm not getting that at all. There's nothing in this beer that I normally associate with mosaic hops. Mouthfeel is light to medium bodied, but as the flavor profile is nasty, who really cares.

I know you can't hit a home run everytime, but considering the brewery, this is really a disappointing effort.

L - clear as day, decent but not abundantly foamy, not much lacing...
S - Oof - Mosaic explosion of blueberry cannabis, a little cut grass
T - Where it shines - Full palate of dankness, berries, blue Smurf goodness, and some cut grass... just full awesome Mosaic goodness. Like a Lizard King full send.
F - Great balance, presence, palate is full but not oily or overbearing as an IPA.
O - one of the best WCIPAs I've had in MONTHS.

On tap at Fieldwork San Mateo

A: Pours hazy golden amber with a frothy off white head that settles to a thin layer and laces nicely.

S: Green, grassy, resinous, citrus zest and punchy tropical and stone fruit, spicy pine, a bit floral, biscuity malt, and light caramel sweetness.

T: Vibrant mix of citrus, tropical, and stone fruit, pineapple, passion fruit, mango, lemon, grapefruit, tangerine, white peach, apricot and melon, spicy green faintly dank herbal notes, a little, pine, floral notes, biscuity malt, and a little caramel sweetness.

M: Medium body, moderate carbonation, soft on the palate.

O: I'm always impressed with how intense Fieldwork's hoppy beers are. They show off everything the hop has to give, including its green side, using it to create a super deep complex flavor. As such, this really stands out from all the other Mosaic IPAs out there.

Mosiac hops. Hoppy nose with a slight dank ness. Lots of flavor for the thin mouthfeel.

I had this as the 3rd beer of a 6 beer flight at Fieldwork in Berkeley. Undated, but it couldn't have been that long ago.

Wasn't the sexiest looking beer, it was good enough but it wasn't the beer's strong suit. Its yellow in an orange juice kind of appearance, doesn't look as good in person as some online photos show it. Small thin white head 1/6". The aroma was super awesome, I swear Fieldwork gets the best Mosaic hops in the world (and otherwise). All that dank melon and weed goodness. Slight amounts of other fruit salad medley sweet and tropical vibe, just amazing stuff in that department. Instant uplifting mood change when you get a whiff of this.

The taste predictably is excellent as well. Continual waves of Mosaic rush over, there isn't Galaxy, but the pineapple juiciness would make you think so. Perhaps its the appearance, but it has a juicy quality to it with minimal hop burn. The body is turbid and soft. In the world of ipas, you could do a lot worse than this offerings. Very very good stuff here.

L: gorgeous. Bright, hazy, luscious. That vibrant yellow hue has me drooling. A finger of head and generous amounts of residual lacing.
S: tons of melon and stonefruit character. Plenty of grass, honey and grapefruit as well. Pleasant smelling.
T: melon is majority of flavor with straight apricot on the finish and the stonefruit/grapefruit aftertaste. Mild bitterness on finish. Really enjoying the flavor in this one.
F: medium in weight, light to medium in body. Moderate carbonation for the style. Nearly creamy texture with nice fizz element. No booze.
O: super enjoyable. At 6.7 AbV, this is a win. I would definitely crush this again. I am very glad to try. Cheers!

Crowler canned and consumed 2/19/19

Poured hazy, slightly cloudy/murky light orange with a finger-size creamy white head, good retention and a solid amount of lacing.

Really terrific, juicy aroma at a great strength/intensity level - melons, tropical fruits, and citrus notes to a lesser extent. Perfect showcase of Mosaic's aroma. Taste is follows, just outstanding.

Feel is med/light, thinner body for a hazy but still very nice.

Overall, terrific regular strength hazy, one of Fieldwork's best.

Tropical dankness on nose...very bold in its aromatic intensity. The taste, however, was more subdued for me. It is a very drinkable and crushable hazy...very smooth!
