Our first foray into the realm of classic Belgian beers was Chloe, a crisp ester-driven Belgian Pale Ale with a prickly carbonation and complex flavor profile that is far too drinkable, and well worth the wait. The Belgian yeast we chose is a blend of two different classic strains that have a track record of making some of the best beers in the world longer than we have been alive, and luckily for us they work flawlessly together in fermentation matrimony. An all pilsner malt grain bill lays the foundation for a delicately complex combination of new world hops and yeast derived flavors. These European and American hops are used with trepidation, providing just enough flavor of floral bouquets and citrus blossom to pair with the matching fruity yeast esters; resulting in a Belgian Pale Ale that remains perfectly balanced while dripping with soft notes of orange blossom, juicy pears, and blooming orchids. We hope you'll find it so authentic that you'll take a sip and think vou fell from a bell tower and landed on a cobblestone sidewalk in Bruges.

Nice floral nose, aromatic.
Nice light herbal or floral taste with hints of grapefruit pith supplying a crisp dryness.
Overall pretty nice and one that I might try again.

Clear golden brew with plenty of foam in the Maredsous goblet. Some sweetness, then spicy and tangy. Cereal taste with toasted sweet bread. Then the dry and mildly yeasty finish. Such lovely flavors as it melts in the mouth. This is in the running for best beer of the summer. I don't know why more breweries don't make this style, or a Belgian Blonde. Nice label with the warbler, for some reason. From the 16 oz can purchased down south in the other California. Dated 01/16/25.

Had Chloe poured from pint can, bottom stamped (likely) canned on "03/10/25," gift muled across country by lil' bro', into squat Belgian tulip.
Pours deep but bright gold with 1/2-finger, creamy off-white head, but with excellent retention, leaving splotchy Belgian lace etched down the glass. Aromas of apple and pear and lots of Belgian yeast spice off pour, with the pear continuing, the spice too but lessened, joined by melon aroma and as warms by aromas of citrus and tart tropical fruits. On tasting, begins smooth, creamy melon, with rather aggressive carbonation, over a drying but still creamy mild pilsner malt body, before a bit crisp, moderately bitter, herbal finish.
Classic BPA, but with an appreciably understated yeast presence, extraordinary aromatics, and an unfortunately overstated herbal bitterness. Drink slowly, for time to fully appreciate the aromatic breadth.

Poured from a 16oz can into a pint glass
Look: Crystal clear golden amber with a thick white head.
Smell: Apple jam on whole wheat, slight hay funk, sweet Belgian sugar, and ripe pear.
Taste: Like apple butter on whole wheat, like the smell. Slightly funky but mostly clean. Medium bitterness on the finish cleans up the sweetness from the body.
Mouthfeel: Crisp and quenching. Carbonation is light and bubbly. Medium bitterness. No alcohol bite to speak of. Easy drinking.
Overall: Very reminiscent of an Orval. Clean drinkable with Belgian complexity. A nice treat from an American brewery.

Nice Belgian Pale Ale with a crisp, dry finish. I didn't pick up any particular notes on the nose or taste buds on this one...nothing really popped or stood out. It was enjoyable to drink, though.
