Fieldwork Parfaits are a series of tart beers where we take a big and creamy base of Pilsner malt, flaked oats, and milk sugar; then ferment and condition the beer on heaps of fruit until the beer is almost opaque with color looking akin to a melted crayon. A small vanilla addition plays with the milk sugar to create a whipped cream-like flavor profile and mouthfeel that is just big enough to compliment the fruit without overpowering or taking away from the real star of the pour. With Blueberry Parfait we have what we think tastes like a long day of doing slappy boardslides on parking blocks then smashing a bowl of Boo Berry cereal and pounding the leftover milk.

Incredible dark purple color. Smell of vanilla, dough, and baking spices. Taste consists of both blueberry but I also taste black berry. Clean, not to tart not to sweet. Not a huge sour fan, but I’d do this again

Served on tap at local Fieldwork.
L: Pours a bright purple/ beet red color. Hazy appearance, zero clarity. No head formation, but slight amounts of lacing left on the glass.
S: Vanilla, tart blueberry and ample lactose. Smells desserty and outright desirable.
T: Loads of fresh, tart and natural blueberry. Vanilla present initially, then lactose kicks in on the finish. Aftertaste comprises all 3 flavors. It does drink sweet, though.
F: Light in body and weight. Slick, smooth and creamy texture. Low to moderate levels of carbonation.
O: Delicious. It's fresh and natural, and super easy to drink. Like bluberries n' cream. Very tasty, and I am glad to have tried. Cheers!
