Making a great Double IPA without Citra, Mosaic, Nelson, or Galaxy is like trying to make a great vegan burger. It's totally possible, but it doesn't mean anyone is going to want to buy it. Keeping that in the back of our heads we built this moderately oversized double dry-hopped Double IPA with two of our favorite hops to brew with every year, El Dorado and Blanc. Two hops that are equally juicy but on opposite ends of the flavor spectrum, when paired atop a light and fluffy grainbill create a complex flavor profile soaked in notes of papaya, yuzu, chenin blanc grapes, and a good ol' fashioned citrus punch from one of them cardboard freezer tube thingies.
