We don't often make southern hemisphere hopped Westcoast IPAs, but now that we've tried Paradise Heights, things are most certainly going to change. This Galaxy hopped Westcoast brings with it what we think is the most perfect level of bitterness, sharp, present, but wholly unobtrusive and fades quickly into the most unique resinous character we've produced. Often resinous profiles are followed by that SoCal dank or pine character we love so much; but not here, just an oil hop character saturated in notes of mango, apricot preserves, Riesling wine grapes, tangerines, and quite a bit of diesel in the aroma. We get such a complex profile from this new wave WCIPA it's been hard to put down since we opened the first one. [Hops: Galaxy]

Galaxy is a hop I either love or hate, rarely is it something in between. This would be the later. Nose reminds me of rotting limes. Taste is all diesel, moderate bitterness on the finish. Feel is crisp and gorgeous optically.
