IPA tends to be a lot like San Francisco; changing substantially every 10 years resulting in everyone complaining about how it sucks now and isn't as good as it used to be. We're not validating those opinions, just saying, "we hear you." With Drying Wishes we thought we'd take 2022 IPA in the complete opposite direction, swapping out all of those oats and haze for rice. Yup, rice. That amazing grain brewers have used for centuries, and is still the best tool for mellowing out malt character and making a beer dry, crisp, and clean. Keeping with the theme of a tropical juice-free IPA, we loaded Drying Wishes up with a ton of Simcoe and Centennial Lupomax, to not only cut back on any potential harshness you can get from overloading with hops, but also to deliver all of those aromas you've been longing for, most notably grapefruit, lemon, tangerine zest, citrus blossom, and the drunk uncle of the IPA family, pine resin. Drying Wishes offers up something that sadly got lost in the haze craze, and is a liquid reminder that just because you can't go to The Fab Mab and see Dead Kennedys doesn't mean you can't still enjoy Jello Biafra doing spoken word at The Chapel.
