Nothing tops Stout brewdays. Opening the brewery roll-up doors before the sun crests over the hills, the sounds of pure silence occasionally accentuated with the soft gurgling of fermentation, hot water and roasted grains hit the mash mixer wafting warm steam across the brewdeck, with aromas of bakers cocoa, coffee chaff, and baked bread permeating the cold morning. The mash-rest timer is set, so it's time to sprint downstairs to make a grunt sculpture and grab a cup of coffee. A true brewers treat, getting to sweeten your morning coffee with first runnings of Stout wort and a big ol' glug of vanilla oat milk. These are the best mornings, and the reason why we made Ice Cream Castles. A Milk Stout with all the roasty, coffee, cocoa, bready notes we dream of with a wildly creamy mouthfeel and just enough vanilla to smooth everything out and make it the perfect Stout for after your shift or mornings on your day off.

Perhaps the most telling thing about this forthcoming review is that I liked this beer. I liked a beer in a style of beer I generally don't like: pastry stout.
Pours black into some Bistro festival glasses, even Mom was all about this beer. Thin light brown head, scaled to 1/4". Aroma is overwhelmingly of vanilla. Drowns out the roasted malt. Light chocolate note behind that.
The taste is so much sweet vanilla. But I remember Bruery's Vanilla Villain, and that was too much vanilla, too much sweetness. I guess this was less than that, because I liked it. I had some on some pie and vanilla ice cream, and it was good there too. Just enough roasted malt base to do the heavy vanilla lifting I guess. Very creamy mouthfeel. I probably would get tired of this at 16oz, but 5-6 oz at a time did me just fine.
This is that stout you breakout for people who generally don't like stouts. I mean, even my mom and gf liked this one. And they don't like stouts.

A: Pours super dark brown, nearly black, with a frothy pale khaki head that settles to a thin layer and leaves a little light lacing.
S: Rich milk chocolate, vanilla, toasted marshmallow, light roasty earthy notes, a a touch of graham cracker.
T: Big milk chocolate and vanilla, you definitely get the lactose, light roasty notes, a touch earthy, faint hints of dark fruit, a touch of graham cracker, and toasted marshmallow.
M: A touch on the fuller side of medium body, moderately soft carbonation, creamy smooth
O: Reminds me of a cross between a soft serve swirl cone and s'mores. Super tasty dessert stout that's perfect for a summer evening.
