Every year we travel far and wide to select the best possible representations of our favorite hops; and this past year we were absolutely blown away by the Nelson and Mosaic we got to rub and sniff. Most notably was the Mosaic, it was some of the most pungent and complex Mosaic we have ever smelled; not just emitting the expected aromas of ruby red grapefruit, honeydew, blueberries, and papaya, but also had some massive notes of diesel, sauvignon blanc, gooseberries, guava, and passion fruit that were very reminiscent of a southern hemisphere grown hop. Instantly we knew we'd have to start brewing an IPA highlighting both of these hops in all of their glory.

Can poured into a Mountain Rambler Brewery pint glass

A: Pours hazy golden amber with a frothy off white head that slowly settles to a firm layer and leaves plenty of nice lacing.

S: Zesty citrus, ripe tropical and stone fruit, a little classic Nelson fruitiness, resinous pine, light grassy and floral notes, biscuity malt, and caramel sweetness.

T: Bright citrus, perfectly ripe grapefruit plus lemon lime, and a hint of tangerine, exotic, tropical, and stone fruit, passion fruit, pineapple, blueberry, gooseberry, apricot, white peach, melon, white grape, and hints of lychee, resinous pine, faint floral notes, biscuity malt, and caramel sweetness.

M: Medium body, moderate carbonation, fairly soft on the palate but with a touch of hop burn.

O: This just kept opening up to reveal more and more. Nelson and Mosaic are such a great combo and they really let them shine here.
