Cantillon Vin Santo is a lambic using Italian wine grapes. Sometimes known as Vino Santo, this Italian wine style is known for being a sweet dessert wine where it is traditionally served in Tuscany. It is made with the pommace of Trebbiano grapes macerated in 3 year old lambic.

750 mL bottle. Clear deep golden. Smells of strong grape. Yikes. Intense. Sharp vinous acidity. Tastes sweet and grapey. Less intense than I expected. Some oak and dried grassy. But mostly sweet white grape. Strong carbonation. Lingering stone fruit acidity. It's quite different. Not sure I love it, but it is a unique lambic.

Yields a slightly clouded golden color with a stable white head atop.

Offers aromas of hibiscus flowers, orange oil and citrus purée with dried herbs and a whiff of peach.

The mouthfeel on this is quite light and well balanced with a refreshingly effervescent and slightly stony carbonation level.

Tastes of a citrus and pear defined tartness, together with an oaken balance to it, which allows spicy herbs and almond honey to add to the beer‘s initial flavours. During its mid palate, a vivid carbonation adds a mineralic refreshment to the beer, highlighting sage and citrus zest. Finishes dry with stone fruits and walnuts among a gentle and long lasting conifer supported barnyard leatheriness.

A bright and fruit forward white grape lambic with a nice mouthfeel and great balance to it, opting for sweeter flavors while establishing a well working citrus forward foundation.

Poured at Quintessence. Pours transparent yellow. The nose is vanilla, white wine, candy, and a slight sourness.

The taste is sour, bright, vanilla, lemon, and orange cream. Excellent. Somewhat dry.

Clear bright gold with a tall and lumpy white foam head.

Vin Santo is intensely aromatic of an explosively herbal cedar that actually leans into Palo Santo with a touch of toastiness and pungency.

Taste is more lactic and dry, but also frothy of a funky grape tang.

L: Deep orange, bubbly head that quickly recedes to a collar.

Bright saturated orange, ample foam. Dusty oak, honey, stonefruit aroma. Taste follows suit, tart apricot, peach, Brett, honey notes. Very similar characteristics to orange wine as it warms. Medium bodied, very interesting. Not too sweet as some claim, try Radikon for a comparison.

The pear / plum note on the new Cantillon grape lambics is intriguing. Plum skins. Pear skins. Melon. Honey. Peach. Soft, smooth, creamy with mild acidity. Plums. Green grape. Less funky than the Sophia,, and a little sweeter. Yum. A little fatty.

Bottle consumed 8-31. White head. Golden orange color.

Earthy, herbal, perfume notes, and tannins. Beautiful grape notes with no acidity. Some stone fruits blend with the grape notes. White like. Has a bit of a champagne feel without being highly carbonated. Perfect feel to it.

CSG meets Vig meets Antidoot Riesling. A marvelous beer.
