The beer pours a slightly clouded yellow to amber colour with a small, stable head atop.
Smells of a bright, lemony funkiness with lots of moss and oak defining the nose among lighter seaweed and a note of fresh butter.
Mouthfeel on this is light and refreshing, very well balanced and thirst quenching throughout.
Tastes of moldy basement, wet cardboard and dried herbs among a light salinity, lime zest and fermented bread. A slowly uprising, stony carbonation adds a welcoming refreshment to the beer, making it versatile on the palate by producing a vivid minerality among bright citrus fruits. Finishes with a well pronounced tartness and a balancing mushroom showing, leading to a crisp and long lasting bitter- and dryness.
While the underwater aging process is definitely a unique approach, I would have a hard time to tell this apart from the regularly aged Geuze blindfolded.

Quintessence 2025
Gueuze Iroise
aka Clambic, aka Big Baby Barnacle
Tasted side by side with an identical brewery-aged bottle, it’s much more mellowed, lower carb, with seemingly muted brightness levels. Enjoyable to be sure, just a softer, subtler experience.
