Our winter specialty is brewed with four different malts and wort separation method. The result is an alcohol degree of 7.1% by vol. and the Original gravity is 16.5°plato. Ayinger Weizenbock is a top fermented and unfiltered wheat bock beer. Colour is golden with copper tones. Aroma is typically and unique for Ayinger wheat beers. You will find low bitterness and dry taste.

Notes via stream of consciousness: Thanks to Merchant Du Vin's refusal to use "best by" dating I have no idea how old this beer is but I'll soon find out if it's long in the tooth. It's poured a cloudy deep-golden/light amber colored body beneath a short head of white foam. It's clearly not as carbonated as their standard weizen. The aroma displays a lightly sweetish and wheaty maltiness and light hints of fruit. The taste follows with the same rich, wheaty malt and fruity notes of apple, raisin, pear, and banana. There's also a touch of clove-like spiciness. It's not that bitter at all, and yet it somehow manages to finish fairly dry, perhaps because of the alcohol although it is just 7.1% ABV. A drip of honey-like maltiness, some of the fruitiness, and a swirl of spiciness linger shortly. In the mouth it's medium bodied on the upper end, and gently crisp and then smooth. What a delicious and rich beer this is! It should probably be sipped at but it's just so compelling that I find it hard to put down. I should also note, truth be told, that this is certainly not the first time I've enjoyed this beer, and that I've also enjoyed it in winter while in Germany. I don't find any difference, nor do I find this to be oxidized or old. Fantastich!

L: Pours a hazed glowing apricot color with some density in the center, has a 1.5" smooth and creamy white head that recedes to 3/4 then slowly to froth, light steady carbo, scattered light frothy lacing.
S: Banana bread, light caramelization.
T: Gently sweet, banana bread, wheat, a hint of honey, yeast, a distant orchard fruit note, has a very light aftertaste overall.
F: Soft and smooth medium to med-full bodied mouthfeel with a medium fast semi-dry finish.
O: Not a complex beer. Incredibly smooth drinking, well hidden ABV, lovely taste, feel, and finish. Remarkably easy to drink and its simplicity allows it to be outstanding or even world-class in its style.

330ml bottle at the brewery tap. Pours a hazy orange-gold. Aroma citirus, candy and Alkohol. Taste is lighter than expected. Citrus, malt, clean spices. Mouthfeel is so smooth, like cream. Outstanding!!

Lovely pour of deep yellow with tall foam in the Pilsner glass. Aroma is all clove and banana. It's very sweet which makes the spice even harden to swallow. Taste is honey, booze, and candy. Wonderful creamy mouthfeel, though. Perhaps this is a textbook example of a Weizenbock, but it is not one I want to drink again. Unless, of course, I'm in some jolly place in East Germany with something fresh and fatty with saurkraut to wash the stuff down with. From the 500 ml bottle.

Pours a cloudy dark golden colour (cloudiness enhanced by dregs that I shot right into the glass) with big two fingers of dense foamy just off white head.
Nose hits with the wheat malt and a good dose of banana and spice and softer citrus aromas; honey/honeysuckle.
Taste follows with wheat cereal malt sweetness, banana, clove along with some pear and apple and again a hint of citrus. A touch of honey and alcohol.
Star of a really good show is the mouthfeel - super creamy, well carbonated with a softly sweet and boozy end - remarkably smooth and delicious.

Poured from a bottle into a pint glass
Appearance – The beer pours a very heavy orange color with a huge head of just off-white foam. The head has a fantastic level of retention, fading very slowly over time and leaving tons of foamy lace on the sides of the glass.
Smell – The aroma is huge of a wheat bread and banana smell mixed with a strong presence of orange and nice notes of yeast, grain, and clove. Along with these smells comes a bit of coriander and notes of dark fruits with some raisin and plum. Along with this is a little bit of cereal grain and a light level of grass.
Taste – The taste begins with a nice wheat and banana flavor as may have been anticipated from the nose, along with some clove and yeast, which again were stronger in the nose. At the same time some sweet orange and a light caramel are there as well, growing slightly stronger as the taste moves forward. Other flavors of a very light level and more clove, are joined by some coriander and some lemon, taking the taste to its end, leaving one with a rich, slightly malty and sweet, and wheaty taste to linger on the tongue.
Mouthfeel – the body is chewy with a moderate to slightly higher carbonation level. For the wheat, malty, spiced and sweet the feel is awesome and makes for a very nice sipper to experience all the rich flavors.
Overall – A very nice Weizenbock for sure. Renowned for a reason.
