not a particularly distinctive take on the style, very much a classic recipe brewed to style, but quite competently done, nice to see these guys bottling and tackling some tougher styles, they have sure evolved since they first opened! this pours clear for the style, very pale golden, and holding a tall white very belgian looking head on it, rising carbonation is very excited! aroma and flavor are led by the familiar belgian strain, notes of white wine, green pear, and lemongrass, estery but well controlled too, not at all over the top, which lets me appreciate the flavor of the grain too. i dont taste a sugar addition, a dextrose or a candy sugar or honey element a lot of these have, and as a result, this feels a bit drier on the palate than a lot of them, which i welcome. not dry, but not a sugary mess either. maybe a touch thinner than the classics in the style, but its not watery, and the alcohol stays peripheral at most. its aided in many ways by the upbeat carbonation, they were wise to pick it up like this. floral notes to finish, a little balancing bitterness, and a springy lightness, more citrus and lemongrass, very bright. well made beer, better than almost any i have had from border before, and in a more ambitious style too. nicely done!
