Collaboration with Odd Breed Wild Ales

This Wild Witbier was brewed and bottled at Barrel of Monks and fermented with Odd Breed's mixed culture of wild yeast and bacteria. Firm acidity yet soft and nuanced layers of Brettanomyces funk mingle with notes of citrus and tropical fruit. A touch of coriander and Florida orange peel are faintly present before leading to a dry, oaky, tannic and tart finish.

Aged in Chardonnay barrels.

Decent fizzy foamy head fades quikly, no real lacing, hazy pale orange color.

Nose fresh citrus, little lemony orange citrus, mild tropical, candy malt notes, pineapple and slight spicy hop, creamy malt, plenty of vinous white wine, floral spices.

Taste brings more tropical fruit, orange, Clementine, candy stone fruit, acidic tangy tropical fruit little citrus, fresh juicy white wine, chardonnay, etc. Finish dry, more white wine and mild tropical fruit, little bitter grassy tropical fruit and vinous hop lingering.

Mouth is med bod, decent carb.

Overall quite nice, good funk and hops, enjoyable.

A - Poured into a Kate the Great tulip a nice mostly clear honey hue with a thin head that faded rather quickly.

S - Aromas of nice coriander, really pleasant wit notes. Solid brett funk. Really pleasant wine barrel aspects, nicely fruity.

T -Taste is wonderfully tart. Very nice wit notes with really pleasant coriander. The brett is nicely present to accent the wit base. The wine barrels nicely bring everything together.

M - Mouthfeel is nicely carbonated, lightly carbonated.

O - Overall this is a very solid beer. Very good base beer with nice brett and barrel.

It might be the best Florida sour that's over 3.5% alcohol. I'm not usually big on brett, but this one strikes a great balance between funk, tart, and fruit without being overwhelming. I can't wait to see how a few years will treat these bottles.
