Collaboration with Odd Breed Wild Ales
Batch 2 is a Wild Tripel that was first fermented in stainless with Barrel of Monks' proprietary yeast before barrel aging for 9 months with Odd Breed's mixed culture of wild yeast and bacteria. The elevated alcohol content and bitterness of the Barrel of Monks Tripel reduced the activity of souring bacteria. As such, this beer is funky but not sour.
