Going back to my cellar, I opted for an Imperial Stout. I am using a tulip glass and serving the beer at 50 degrees. The pour created a frothy, foamy, two-fingered, light tan head with poor retention. The quick dissipation left no lacing on the glass. The color is inky black, with ruby mahogany hues, charting at SRM 36, and opaque. This beer's appearance is average.
Nosing the glass, I smell molasses, herbal, dark roasted malts, toasted brown bread, chilis, leather, raisins, cinnamon, dates, toffee, caramel, tobacco, chocolate, coffee, and earthiness. Smelling the glass again, I notice bready, toffee, floral, vanilla, vegetal, smoky, char, and earthy.
Sipping the beer, I taste toasted bread, toffee, anise, chilis, raisins, light oxidation, toffee, caramel, dark chocolate, vanilla, cinnamon, dusty barn, tobacco, flower bouquet, grassy, herbal, vegetal, molasses, char, dark roasted malts, leather, medium roasted coffee, and earthiness.
The mouthfeel is astringent and smooth, finishing with some bitterness. The body is medium-plus and low carbonation.
I got this beer from Tavour during COVID-19. I drank the other bottle, and I do not remember much. The beer is slightly overaged, but the chilis, vanilla, cinnamon, and chocolate help me not notice it much. I love it when breweries do Imperial stouts. However, other breweries make them so much better. I want the beer to have a bigger malt profile, depth, and character. The beer is as described in the style guidelines; the bigger malt profile is more preferential.

16oz can. Poured out an opaque, jet-black color with a small, light brown head of foam. It left sudsy rings of lace on the glass. It smelled of peppers, coffee, chocolate and cinnamon. Nice spicy peppery heat with cinnamon, nutmeg, sweet chocolate and toffee.

750ml bottle from Tavour. Dark, muddy brown, small bubbly beige head. Rich chocolaty aroma with booze on the back end. Chocolate starts the taste, dark and bitter, mild chili spiciness, cinnamon and vanilla. Melds beautifully together. Soft sweetness and a mild spicy bite.
