White waxed and capped bottle , chilled and poured into a Spiegelau snifter . Dark brown liquid capped by a creamy one finger foam layer, good retention, settles to a thin ring
Aroma is bourbon, brown sugar
Taste is bourbon, dark fruits, raisins, figs, toffee, roast malts, brown sugar , hint of char
Slightly sweet but not too much, slightly sudsy

Nearly no, light brown head. Very dark and opaque brown look. Moderate amount of a mix of slightly sweet smelling, dark roasted grain and cocoa, with a whiff of butterscotch, for the aroma. Smooth and rich, slightly sweet molasses and very dark roasted grain, that has the slightest hint of anise or licorice, barely so, and it quickly disappears. Medium heavy, slightly bright, viscous mouthfeel. The finish is a blend of dark roasted grains, butterscotch and some cocoa. Thumbs up.

375ml corked/caged bottle served in a Red Hook sample glass. Bought it a couple weeks ago at the brewery.
Pours brown/black with little head. Smell is vanilla, oak, booze, a little anise. Lots of vanilla.
Taste is hot, boozy, clear bourbon note, still lots of vanilla, sweetness beats the roast bitterness and it comes across a little like a chocolate shake.
Mouthfeel is velvet, thick and sticky. Overall, pretty solid BA stout. Barrel might be slightly too pronounced for my taste, but not out of bounds.

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing opaque black in the glass with a thin brown head that dissipates to sparse patches with slight lacing. Aroma of dark toasted malt, cocoa, molasses, dry caramel and a touch of coffee. Flavor is dark toasted malt with moderate char, coffee, light cocoa, dry caramel. Char and coffee finish with a bit of woody oak. Medium bodied with light creaminess; solid carbonation despite the nearly still pour. Similar to the base stout, but less chocolate in the flavor, leaning more to coffee and malt char; thinner body with light oakiness from the barrel. I really liked the base Dark Olympus, but although this is good, it seems simpler than the unbarreled version. The body of the base was more robust. I think I'd get the regular version next time.
