Even though Saint-Hilarie was a botanist from the 18th Century, she is still making history in the 21st Century, becoming the first bière de garde to be produced in Brazil. My 300 ml pour come from a bottle (the keg had tapped out), and was far and away the most expensive beer at Uaimií (just under R$18). With much anticipation, on to the beer:
Casting a light orange yellow color, the beer is topped with an inch of head and retains much of it well. The aroma mixes dry, earthy aspects with a sweet, succulent kiss of tangerine, sugar, and yeast. At first sip, the beer has a dry apricot note. Earthiness follows. Some sugar follows through, so in a way this becomes like a fusion between a sweet Belgian blonde and a rustic bière de garde. With an airy body, the carbonation is lively, bubbly, and lovely. It's like having fireworks going off in my mouth!
Altogether, Uaimií has a gem in Saint Hilarie. Very good execution on this beer.
