at first a very clean and refreshing pils, light and dry and bubbly and simple, but it doesnt warm up in a very flattering manner, and it gets a little soapy, even lightly phenolic once it comes up to temperature, not a good look for a pils type, but its minor, and as long as you drink it cold, it hits the mark for the style for sure. light yellow beer with some good fizzy bubbles, smells like european pils malt dry and crackery, and the lager yeast seems really minimal to me. a touch of herbal character from the hops, but thats also quite light here. the flavor is fine, just a touch of citrus for a moment, the dry malt, and then the slightly chemical finish later on, its not as crisp as i want it to be when the yeast turns weird, but during the first half of the pint, it was working for me. i think this could stand a little refinement, but the recipe seems good and its cool to see a little operation like this tackling an old world style lager. its simple beer, but it drinks easy. tidy up the lagering and itll be excellent.
