saison with carrots, which i think are an underutilized ingredient in beer, especially saison, they are earthy and sweet and can handle some yeasty esters in a style like this. the execution is nice on this, although the yeast is a little generic, the classic french saison 3711 type, white winey and lightly peppery and citrusy. not as orange in color as i thought it might be, hazy and tinted orange but it doesnt look like carrot juice or anything, short white head on it, cool glassware in here too! definitely get the french saison yeast before the carrots, but the sweet carrots add a lot to this, even if they are fermented pretty dry. i like the honey note and the earthiness, minerals and soil, distinctive but superbly balanced with the fuller bodied wheat, also earthy and kind of autumnal to me. expert texture too, lots of body and richness, but dry and lively, finishing with the peppery saison yeast. i think this would make an epic red beer with some fresh tomato juice and spices blended in, but i like it a lot on its own too. unique and inventive and very well executed. id go back here for this one! my favorite of their beers i have had so far while in texas this week!

On tap at Southerleigh Fine Food & Brewery at the Pearl (San Antonio, TX), served in a cylindrical flute. Hazy gold with a nice cap of white head and patchy lace. Earthy, spicy aromas of Belgian yeast, pale malt and citrus. Spicy yeast follows in the flavor with more earthy notes and slight root vegetable sweetness. Light to medium body with crisp, refreshing carbonation. A nice, full flavored saison with a little extra body.
