8/10/25 - (Home) (Chicago. Illinois) Can Notes: Purchased a single 16 oz can at Beer on the Wall store temperature on 5/6/25 for $3.98 including tax, refrigerated until opening this morning. Canned 4/29/25 @ 10:07:35 AM, can stamp JPK, XO. 5.75% ABV Mosaic & Belma-Hopped American Pale Ale brewed with raspberry. Tasting notes: Bright Citrus, Ripe Berry, Pleasant grass. Artwork by Dan Grzeca. Brewed and canned by Hop Butcher For The World in Chicago, Illinois and Bedford Park, Illinois.
Appearance: Poured about 2/3 of the can into a shaker pint glass, yielding a murky orange yellow base and a bubbly bright white head that leaves a bubbly cover over the base. 3.5
Aroma: Light citrus after a few attempts, nothing else I can identify. 3.0
Taste: Much stronger and enjoyable. Citrus, fresh cut grass, pine and raspberries. As the brewer intended. All come together well. 4.0
Mouthfeel: Sweet, though enough bittering hops to keep this reasonable. Drinks light and easy, perhaps a tad below the 5.75% ABV. Lightly dry, faint gentle carbonation and a medium creamy body. Citrus pine raspberries consistent through the finish. 4.25
Overall: I’ll revisit with a fresher version (my fault sleeping on it this long in my refrigerator), but I am digging this modern APA take. Everything but the near AWOL aroma seems to have held up well, and I’d revisit this in the future. 4.0

A good one from Hop Butcher.... . Pours a NEIiPA-like straw yellow color with a big foamy white head and good rings of lacing on the glass. Aroma and taste feature a herbal, earthy and dank hoppiness. The raspberries are very subdued. There is a mild fruitiness here, but I picked up more on tobacco and herbs than fruit. Mouthfeel is crisp, dank and very nicely bitter. A quite robust APA!!! I would get thisoneagain

I think the recipe for this beer has changed over the years from what's listed in the description. As of June 2025, this is a pale ale with Mosaic and Belma hops and raspberry.
The raspberry is subtle and complements the hops well. Typical hazy orange appearance with minimal head. Dank hoppy berry nose. The taste follows. Medium mouthfeel. Interesting!

Not quite fully hazy, a few steps shy of opaque straw yellow, with a short but well-retaining off-white head.
Smell is dank and spicy, but taste is peppery and juicy, though almost also giving Sweet Tarts.
The body is really light, though tasty and refreshing, not quite what I've come to expect from the Butcher.

Aroma is very dank/nutty hops and mild sweetness/hint of raspberries. The flavor is fruit/tropical fruit, slightly earthy malts and a very slightly bland/mildly sweet/spicy Mosaic hop finish.

This had a nice light orange appearance. The smell had was citrus, with some lemon and grass. The taste had something like tangy raspberry or some other type of berry in it along with lemon. Some nice bitterness for an APA. Mouthfeel was a little thin but for an APA at 5% not too bad
