Simcoe, Riwaka, Mosaic & Nelson Sauvin- hopped Double India Pale Ale.

The vibe from the brew crew on Hop Dip elicited descriptors like champagne heavy mimosas, sugar dusted lemon bars and tropical smoothie shooters. How fun (and delicious) does that sound?

Yellow to gold in color with a hazy complexion. There’s a half inch of densely packed off white on top. Ina few minutes it faded to a fingernail covering the rim and three quarters of the top. Moderate, soapy lacing. The aroma is of earthy hops and green veggies. I’m tasting green veggies and unripe melon. The mouth is smooth and approachable.

A: Pours an extremely murky medium golden burnt orange in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and moderate dark golden yellow + bright orange + bright yellow + peach + apricot colored highlights. The beer has a three finger tall dense creamy sudsy foamy off-white head that slowly reduces to a large patch of thick film covering approximately 65% of the surface of the beer surrounded by a large patch of slightly mottled thin film covering the remainder of the surface of the beer and a medium thick ring at the edges of the glass. Significant amounts of lacing are observed.

S: Moderate to strong aromas of juicy citrus/grapefruit + tropical/pineapple + tropical/passionfruit + tropical/mango + gooseberry + vinous/white grape hops over the top of moderate aromas of biscuit + pale + wheat + oat malts with a light amount of sugary sweetness.

T: Upfront there are moderate flavors of biscuit + pale + wheat + oat malts with a light amount of sugary sweetness. That is followed by moderate to strong flavors of juicy citrus/grapefruit + tropical/pineapple + tropical/passionfruit + tropical/mango + gooseberry + vinous/white grape hops which impart a light amount of bitterness which fades away quickly leaving moderate lingering tropical + citrus + vinous hop flavors.

M: Medium bodied with moderate amounts of carbonation. Moderate amounts of creamy soft/fluffiness mid-body with a light amount of dryness in the finish. Hints of being a touch thin/watery towards the finish.

O: Easy to drink with well hidden alcohol and a pleasantly creamy soft/fluffy mouthfeel albeit with a hint of a thin/watery aspect. Very enjoyable and does a great job of highlighting and incorporating Nelson Sauvin into the hop profile for this beer.

Hop Butcher loves their Sabro and Neslon hops, which are the two I am not a fan of unfortunately. However, this beer and it's use of Nelson is nothing short of astonishing. I am getting a West Coast meets Northeast vibe from this one, in the best of ways. Great departure from their usual style.

Murky baby food-like brown/orange color, with a bright and thick white foam covering. The foam stuck around for some time. The smell is citrusy, with odors of grapefruit, white grape, raspberry, and orange. The flavor leads with white grape and bitter grapefruit. I detect a bit of cucumber. Berry and citrus flavors round out the flavor profile. Bitter fruitiness stands out the most. The mouthfeel is thick, pillowy, juicy, and smooth. The carbonation is light. Overall, this beer is unique in the Hop Butcher for the World NEIIPA lineup. It is not one of the best, but is a solid change of pace.

16oz can, dated 08.22.2022, poured into a 16oz tumbler glass.

The beer pours a very hazy orange color, golden and straw hues with a foamy white head, nice and frothy with excellent height, retention and lacing. The aroma is nice, lots of tangy lime, grapefruit peel, pineapple, bitter and dank weed, grass clippings, pine resin and doughy pale malt. The flavors are very pleasant, tangy citrus, lots of lime and grapefruit, wildflower, pineapple, pine, grassy weed, lots of rich earthiness and a nice rye and pale malt base. The mouthfeel is good, coating, lively, smooth medium body with a crisp and dry finish.

Verdict: A nice IIPA from Hop Butcher. Lots of tangy and interesting flavors that highlight the earthy and bitter hops without feeling too boozy or sweet.

One of HB's 8% DIPAs instead of the more common 7.5%. I don't taste the difference in alcohol, but out of superstition I think the 8%'s are some of their better ones. This looks and smells top notch as most of their IPAs do. On the tongue it's super soft and full as usual too. I'm wondering if this is a bit too fresh (at 3 days old) though as I'm getting some hop burn that usually dies down a bit after a few more days for them. I do get the grapefruit (more rind than fruit) that the can says it'll have. I don't know what exactly the riwaka does for the hop combo although I can usually pick out that very distinctive hop. Overall I'm really liking it, but will maybe revisit my review when I have another can in a couple of days. The bitterness is nice to my pallet as I'll take that over too much sweetness any day.
