A very different Chinook hop profile coming here. Where its grown MATTERS. In its usual format. I'm a big fan of the hop, and its standing alone against the malt to 1056 backdrop of an APA. But, here in this one. It's more in the one and done for drinkability. There's a bit of clash with it working according to that imho. I would find this hop interesting to work with with more phenols in its yeast, and less of these kind of malt reactions. But, in its here, and now. That Bleu cheese and bacon hamburger item on the menu is what would really be an item with this one.
I'm not really thrilled with the wetness being offered here, as well. There's a slight black pepper kind of vegetal something in the late finish with that bitterness.
