Mousse is a 6.5% Brut IPA. Brut IPAs are a new style of hoppy beer that we are excited to explore. This beer has our same extreme IPA hop rate, but is very dry, almost reminiscent of a glass of champagne (hence the name). The result is the hop character you love but dryness that allows superior crushability and balance. We hopped this beer with Columbus hop oil, Lemondrop and Hallertau Blanc.

Pours a light yellow straw color, decent white foamy head. Faint citrusy hop aroma. Lots of lemon, a bit grassy, bright and citrusy. Interesting bitterness on the very short, dry finish. Pretty light for 6.5%. Glad I tried it.

L - shit, they weren't kidding with the bubbly. Basically overflowing the can before I could even grab a glass. Uh, pours what looks like champagne. Check. Huge fluffy head. Gotta pour nice and slow. Check.
S - finally getting some beer here. Lemon and sourdough. Zesty white grape. The aroma seems thick and far away, somehow. Clouded. Kalamata olives. Pithy grapefruit without the spice.
T - weirdly light and airy. Almost absent. Stringent, awfully bitter grassiness dominates. Puckering lemon and a weirdly sweet honey flavor that does add some smoothness to the abrasion. Dandelions and more crabgrass on the finish.
F - a lot smoother than champagne, there's actually some heaviness here. Moderate carb to top it off.
O - hm. Not thrilled, but I can't hate. It wants to be refreshing, but the sticky breadiness kinda kills the dry Brut crispness it's going for.

On draught at brewery. It pours a semi-transparent straw gold with light green hues, and a half finger of bright white that dissipated slowly leaving a sheen of creamy lacing. The color is unique. It smells like sauvignon blanc: grape, lemon peel, grass, and light floral hops. The taste is super dry with an earthy, grassy bitterness and bitter lemon. While you can taste the grape there is nothing sweet about it. In fact, it finishes even more bitter than it opens. This ale has a champagne quality: it is crisp and dry with lively carbonation. While it has a moderate ABV of 6.5% the bitterness makes it hard to drink another pour. I admit I'm not a big fan of Brut IPAs but this one seems well-crafted. I'm glad I tried it at the brewery but I'm also glad I didn't purchase cans.
