Collaboration with Great Notion
Bourbon Barrel Aged Hot Cakes with Banana, Coconut and Maple Syrup is brewed in collaboration with Great Notion. This beer takes banana pancakes to another level. We aged it in bourbon barrels for 18 months before being conditioned on wild Thai Banana, coconut and maple syrup. This is the boldest and creamiest banana aromas and flavors we’ve ever gotten in one of our beers before and we are very excited to share it with you.

First impression of the appearance was, unfortunately, a rather large floatie (probably toasted coconut). Head production is minimal, and after a slightly offended fizz, it quickly ran away and hid. The body of the brew itself is attractive enough, dark black with far less sediment than I expected after that floatie.
Nose is sweet and potent, focusing on the bourbon and maple syrup. It has a lingering heat that suggests it will be similarly hot on the palate. I'm not getting any banana and coconut standing out above the base beer and the bourbon mash - I'm not saying they're not there, but I don't think you'd pick up on them if you didn't know to look for them. Other notes include molasses, toffee, espresso, red grape, and honeycomb. I'm a bit surprised, considering the brewery described the "boldest" banana aroma. It's a very pleasant and inviting aroma, but falls short of excellence due to its lack of complexity and strength.
Everything I said about the nose? You can wipe the slate clean for the delivery on the palate, because WOW! Everything is there, and in such strength you're constantly amazed by another flavor note landing strong and sweet. Tons of banana - no joke - along with maple syrup, pecan, grape, chocolate, espresso, molasses, chocolate, cream, honeycomb. I could probably go on and on. It really does remind me of banana pancakes dotted with chocolate kisses and drizzled with maple syrup - like one of those diabetes/heart attack confectionery delights one might find at the multinational home of hop cakes.
Super thick and chewy; bold, big bodied, but not so boozy that you can't sip, chew, and savor. Sticky finish; the boozy effervescence isn't enough to clean the palate quickly, and the sugars linger pleasantly.
