Since Copperpoint has a more popular Blood Orange wit, I don't know what went wrong here.
To figure out Witness, I had it side-by-side with Blanche de Namur which I consider a Top 10 wit. Witness drops its foam really quick, Smells a very mild orange and coriander, Tastes relatively bland and has lots of bubbles but without significant purpose. All that said, Witness was a decent table wit to improve a meal of leftovers.
In any such comparison of an American rendition to a Belgian original, I often say "refresh the yeast" and that probably applies here. Witness simply needs more life.
For my brewer micro-review, Copperpoint seems to have similar motivations as the Florida brewers that started 5 to 8 years ago when Florida's beer scene was both sparse and weak. Now it is only weaker than it should be ... or at least it should be better given the size and cosmopolitan market. Copperpoint does have two saisons and if I have another of their ales, I would try a saison.
1/26/22 Had Witness again. And I was a bit harsh in my review and edited the above and up-rated a bit. Witness is a good table Wit.

We love reviews (150 characters or more)! Check out: How to Review a Beer. You don't need to get fancy. Drop some thoughts on the beer's attributes (look, smell, taste, feel) plus your overall impression. Something that backs up your rating and helps others. Thanks!
