i believe this is the correct listing for the bottle we cracked, wild saison, which i guess is a beer they do some different things to, and this one is done with a lot of nelson and mosaic hops and then fresh spruce tips, really cool beer, not a crowd favorite but i shared it perhaps with the wrong crowd, this is right in my wheelhouse, super funky and wild, not too sour, grainy and rustic still at its core, hoppy and juicy in a compatible way but not bitter, and absolutely packed with natural pungent spruce, even after some time in my cellar. hazy wheaty looking with some body and an airy white bottle conditioned looking head on it, lasting and frothed the entire time. the nose on this is wild, white winey, newish oak and lots of bretty funk, some lemon cream to it, strong spruce aromatic, new school hops hitting meyer lemon and even dill to me in the nose, starchy grain at the center, neat esters in here, white pepper and green pear, nelson in front of mosaic as well, oddly fresh for being as mature as it is, the spruce and hops give it a lot of life, mouthwatering without being super tart, very distinctive, even an almost lambic wrinkle to the ferment, wild for sure. the flavor rules, lots of christmas tree and gin character to it, the hops are never bitter but real bold, pineapple and verbena from the mosaic, white wine, green melon, and even kiwi fruit from the nelson, gorgeous, and still so forward in here. the spruce adds an oily thing, the funk starts early, there is quite a bit of wood here too, light vanilla and even honey notes from it to me, and this warms up nicely, with more and more spruce and funk kicking up, an almost orval type if brett to this. very floral white wine to me as it moves along, some in our group dont love all the spruce but i really do, and i love the ferment. rushing carbonation pushes through the grainy body, and this is off dry with light white vinegar and cooked sugar at the end, good balance, really complex. ive loved the wild stuff these guys do, and this is wonderful, both as a spruce beer and as a funky saison, would love to try some other iterations of the saison! hope to pop it here again when we are in reno next week!
