For the S’mores variant, we took our 7% robust chocolate milk stout Hornswoggler and added over 60 gallons of Cholaca (pure liquid sweetened cocoa nibs) for extra chocolate character and 100lbs of mini marshmallows on the hot side. Then in secondary, we added over 700lbs of crushed up graham cracker and over 8lbs/bbl of marshmallow flavored coffee. Sweet milk chocolate, salty&sweet graham cracker, aromatic marshmallows, and nice subtle roast from the coffee.

Poured from a 16 oz can into a tulip glass.
The pour is pitch-black with literally no head whatsoever. No lacing either. Looks like a big glass of soy sauce.
The aroma brings notes of roasted coffee, marshmallows, and milk chocolate. The graham crackers are subtly present but become more prevalent as the beer warms.
The taste follows the nose: Sweet chocolate and marshmallows finished off by bitter, dark roast coffee. The graham cracker flavor is almost non-existent, but as the beer warms its presence starts to come through.
The feel is surprisingly full bodied with moderately low carbonation. Chewy and smooth, yet a bit syrupy.
Overall, a pretty good milk stout that falls a bit short of what it was trying to accomplish. The coffee is a bit overpowering and the graham cracker notes are unfortunately far too muted. Still, this is an otherwise good and flavorful beer.
