Longoven:Chapter One is the next collaboration w/ our friends at Longoven. Early ‘17, our Head Brewer Matt+Chef Manning came together and created something special. We started with a simplistic malt bill and added Sea Lettuce(a leafy seaweed) to the mash courtesy of @pleasurehouseoysters. We then laid a bed of Sea Hair(a fine, hair-like seaweed) on top of the grain before we sparged. After the boil was over, we added Sea Beans+whole Oysters. We then barrel fermented the beer in French oak red wine barrels w/ mixed culture, our house culture, and a small percentage of dry Chablis yeast. The beer fermented/conditioned in the barrels for 12 months. We then bottle conditioned it for 4 months. The initial aroma/flavor profile has a beautiful oceanic, salinity to it. After your second sip, the beer just completely opens up to an incredible minerality. Notes of subtle oak, ripe pear, light tannic characteristics, zippy green apple, honey-suckle, Sauvignon Blanc skin, wet earthy aromas, and wildflowers. In honor of Longoven officially opening their brick&mortar, we are pleased to share w/ you this special creation.

Beautiful beer, pale orange appearance with a soft beige head that recedes quickly to a collar. Soft discrete brine, mineral water, floral, and wine cellar notes on the nose and palate. Soft mouthfeel, light to moderate carbonation. Lovely.
