Culminate Raspberry is our first fruited blend of turbid mashed 1, 2, and 3 year old spontaneously fermented Lambic-inspired ales. Every year we put away wine barrels full of Lambic-inspired beer brewed as closely to Belgian tradition as possible. It involves a complex turbid mash process of Pilsner malt and unmalted wheat, a long boil with aged whole leaf hops(aged for over 5 years), natural cooling and inoculation in our rooftop koelschip, and barrel fermentation. The wort is fermented only with the natural yeast and bacteria that land on it overnight while cooling. A portion of the beer in this blend dates back to some of our first brews ever in 2016. Culminate: Raspberry was blended onto over 500 g/L of Virginia raspberries from Agriberry CSA and Farm and later bottled on March 5, 2019 and conditioned only with the cultures present in the beer.

The beer pours a nice white head that dissipates quickly while the beer itself is as orange red that looks pretty nice.
The smell is delicious. It has a delicious mix of raspberry sugary sweetness and tartness with a slight hint of vinegar.
The taste is good. The sweetness in the smell does not come out as much in the taste and is overwhelmingly raspberry tartness with a moderate acidity and a hint of vinegar.
The feel is pretty good. It has a light body and slick texture with a dry and acidic finish.
Overall, a good lambit even if it is much more acidic than expected.
